Here is how you make Chicken Liver and Veggie Scramble:

Boil chicken liver until cooked through, a few minutes. Wash and chop Zucchini, yellow squash and red pepper. Wipe off mushrooms with a damp paper towel and chop. Chop onion. Spray fry pan with Olive Oil cooking spray and saute veggies over medium heat until tender. Add chicken liver. Beat egg whites with a few tablespoons of water and add to pan.
