Separate eggs.In a medium bowl, stir together flours, sugar, baking powder, cocoa and salt.In another medium bowl, beat egg yolks slightly. Stir in Milk, melted chocolate, applesauce, vanilla, and stevia. Add this liquid mixture to the flour mixture and stir until just moistened. (batter should be lumpy).In a small bowl, beat egg whites until they form peaks. Gently fold beated egg whites into chocolate mixture, leaving a few fluffs of egg white.
