Here is how you make Cammy's Breakfast Cookies:

Ingredient set #1? ? cup chopped or sliced almonds? ? cup unsweetened shredded coconut? ? cup walnuts or other nutsToast on a baking sheet in a 350 degree oven until fragrant (about 5 minutes). Let cool and set aside.Ingredient set #2? 1 ? cups applesauce? 2 eggs? ? cup almond butter? 1 T real vanilla extract (or 1 vanilla bean)Mix until smooth then set aside Ingredient set #3? 1 cup vanilla whey protein? 3 T cocoa (or omit if using chocolate whey protein)? 1 cup powdered sugar alternative (stevia for baking, xylitol, erythritol, etc)? 1 cup flax seeds, ground to a powder/meal? ? tsp sea salt? 1 tsp baking powder? Cinnamon to tasteMix well.Blend Ingredient set #1 and #3, then stir in Ingredient set #2 until full incorporated. At this point I will sometimes add in chopped apple or a chopped sugar-free chocolate bar, etc. Use your imagination, or use this opportunity to use up some of the stuff in your freezer/pantry. Let batter sit for 5 minutes. This won?t be quite as thick as typical cookie batter. Don?t worry! I?ve even replaced the almond butter with pumpkin puree and added some pumpkin pie spice and they were delicious!Line a baking sheet with a silicone baking mat or parchment paper (otherwise, grease the sheet very well). Drop the cookie batter by rounded spoonfuls making sure to smooth them into a cookie shape since they won?t move much in the oven. Place in a 350 degree oven for 10-13 minutes, until fully set.
