1/4 c. peanut butter
1/2 c. raisins*
1/2 c. dried apricots, chopped*
1 c. walnuts, chopped*
1 c. all purpose flour
1/2 c. Splenda brown sugar blend
1 c. rolled oats
1 tsp. nutmeg
1 tsp. cinnamon

Here is how you make Fruit, Oat, and Nut Breakfast Cookies:

Combine eggs and peanut butter (I used Peanut Butter & Co. Natural PB in Cinnamon Raisin Swirl flavor.)Add raisins, apricots, and walnuts to egg mixture; combine.In a separate bowl, combine all other ingredients: flour, brown sugar, oats, nutmeg & cinnamon.Add dry ingredients gradually to wet and stir until everything is moist.Spray cookie sheet lightly w/ cooking spray.Drop cookies an inch apart onto cookie sheet. Cookies will not spread while baking.Bake at 350 for 15 minutes or until cookies are firm.Makes 30 small cookies.Texture of cookie will be slightly crispy, something like a granola bar.*Other combinations of fruit and nuts will undoubtedly be equally tasty, just remember to recalculate your nutrition facts based on what you use! :)Number of Servings: 30Recipe submitted by SparkPeople user DANALYNN45.
