4 cups whole grain cereal flakes (Wheaties or Total); 1.5 c Sneaky Chef Flour Blend (made with 1c white flour, 1 c whole wheat flour and 1c untoasted wheat germ);1 tsp baking soda; 1 tsp salt; 4 tsp cinnamon; 2 large eggs; 0.75 c brown sugar unpacked; 0.25 c canola oil; 0.25 c unsweetened applesauce; 3 tsp vanilla extract; 1.5c part skim ricotta cheese; Cinnamon Sugar for dusting.

Here is how you make Sneaky Chef Breakfast Cookies:

Pre heat oven to 375 and line a baking sheet with parchment or spray with non-stick spray. Crush cereal in food processor or in a bag with a rolling pin. In large bowl, whisk cereal, flour blend, baking soda, salt and cinnamon. In separate bowl, combine eggs, brown sugar, oil, apple sauce, vanilla, and ricotta. Add dry ingredients to wet with a rubber spatula making sure all ingredients are wet. Make 1Tbsp size balls and roll in cinnamon sugar. Drop on to baking sheet and flatten with fingers or back of spoon. Space 1 inch apart. Bake 15-18 minutes.
