Curry powder, 1 tbsp
Turmeric, ground, .5 tsp
Cumin, ground, 1 tsp.
*Fresh Tomato, 1 oz - diced
*mushroom, fresh, 1 oz - sliced
*Garlic (1 Clove), diced
Orange Peel, 1 tsp (zest)
*Extra Virgin Olive Oil, 1/2 tsp.
salt & pepper to taste


How Do I Make Curried Swiss Chard Scramble?

Here is how you make Curried Swiss Chard Scramble:

Cut off chard stems & chop fine. Sautee curry & spices with EVOO and chard stems for 5 minutes. Add water as necessary to prevent burning. Add garlic & mushroom and tomato & cook for another 5 mins. Add chard and sautee until just wilted, then add all eggs and stir occasionally until eggs are set to your liking. I like mine really well done. Sprinkle additional curry powder, salt & pepper to taste.
