Makes 8 1/2-cup servings.1. Set yogurt starter out on counter to warm to room temperature.2. Slowly pour milk powder into cold water, whipping as you do.3. Slowly pour inulin into milk, whipping as you do.4. Heat milk over medium heat just until the first bubbles from boiling begin to show in order to kill bacteria that may prevent the yogurt starter from growing.5. Immediately remove milk from heat. (I find that it helps to prevent scorching on the bottom if I plunge the saucepan into about an inch of cold water.)6. Allow milk to cool, stirring occasionally.7. Cool to 112 degrees Fahrenheit. It works best to use a digital meat thermometer for this step. The correct temperature is vital.8. Working quickly, pour a tablespoon of milk into yogurt starter and mix thoroughly with a fork.9. Working quickly, pour the yogurt starter back into the warm milk and whisk thoroughly.10. Pour the milk mixture into the container(s) for incubation.11. Incubate at 112 degrees Fahrenheit for 4 hours.
