Olive Oil, 1 1tsp

Here is how you make Mediterranean Eggs:

Chop veggies and set them aside. Mash white beans with a fork. Heat olive oil in a skillet. Add onions, and green peppers. Saute until softened. Add garlic and ginger. Saute a few more minutes. Add mushroom, mashed beans, oregano, black pepper and salt. Saute 2-3 minutes. In a small bowl scramble egg and egg white, add about 1 tsp cold water and mix well.
