Meanwhile, in a large bowl, combine eggs, sour cream, mustard, and lemon pepper. Mix well using a wire whisk. Add egg mixture to ham mixture. Mix gently to combine. 3. Lower heat and continue cooking until eggs are set, gently stirring occasionally. For each serving, place a muffin half on a plate and spoon about 1/2 cup egg mixture over top.
