I really like hominy, and this is one of my favorite "brunch" dishes when I have friends over. It is very filling, and staves off the hunger pangs for hours. I am presenting the pumped-up (fatty) version of the recipe so that people can see what variations I like, but usually I don't include all the fatty ingredients - I'll do the cheese but not the sour cream, or put in two slices of bacon, chopped up, in place of the oil, cheese, sour cream, and chipotles. I'm sure there are many other variations.
