4 Eggland Best Eggs
1/3 Cup Pancake Mix (Hungry Jack)
1/3 Cup Water
1/2 Cup Fat Free Cottage Cheese
8 oz Non Fat Greek Yogurt (Chobani)
1 Cup Frozen Blueberries
1 Packet Sweet 'N Low
1 Tsp Cinnamon


How Do I Make Low Fat Filled Crepes?

Here is how you make Low Fat Filled Crepes:

Mix Pancake Mix and Water together until well blended. Add 4 eggs (or eggwhites to reduce fat) to the pancake mix and whisk together.Mix Cottage Cheese, Greek Yogurt, Blueberries and Sweet-N-Low together in a bowl and set aside.Pour mix into frying pan forming 6inch circle. This will be very thin mix. When it is not longer running, flip crepe just as you would a pancaked. Sprinkle with cinnamon and set aside. Do this to make 4 6-inch crepes.When all 4 are made, spoon in 1/4 of yogurt mixture into crepe and roll. If you have any yogurt mixture leftover, add a spoonful on top.Number of Servings: 2
