Combine dry ingredients except for the sugar. Mix well. Add applesauce and milk and stir until just, but not fully, combined..In a separate bowl, beat the egg whites and sugar until they reach stiff peak stage. Gently fold the egg whites into the waffle batter until combined..Follow the instructions for your waffle maker. Note that cooking time will probably be less than normal due to that lack of fat in the recipe..In a microwave safe dish, microwave the strawberries until they are soft and have released some liquid (~ 45 seconds). Add the maple syrup. I blend them together to make a smooth strawberry topping, but you can leave it chunky too.. My waffle maker makes sheets of 4 standard waffles per sheet. A serving is 2 waffle squares..Nutritional information for this recipe includes the strawberry syrup. .NOTE: You do not have to grind the oats to a powder. You can leave the rolled oats whole. I just like having the oats fully incorporated into the waffles. I grind the oats with an immersion blender.
