Put the eggs, egg substitute, cheeses and half & half in a blender. Add the salt and pepper and blend for about 30 seconds or till well blended. Mix vegetables and greens together in a small bowl, then fold into the egg mixture. Pour into a large microwave glass bowl, or 2 individual large ramekins. Microwave for about 3 1/2 minutes on Power Level 7. Take out and stir once. Microwave for an additional 1 1/2 - 2 minutes, or till slightly firm in the middle (don't overcook or they will be rubbery. I often let them be a little liquidy in the middle, then remove from the microwave, stir and let sit a minute.
