Here is how you make LAM Fritata:

Makes 8 3-4 oz slicesTake a 10 inch oven proof skillet (cast iron works best) and melt the Smart Balance spread on the stove top. Add the leeks to pan on medium high unti soft and white parts of leek have turned almost translucent. Add asparagus and saute for 3-5 minutes, then add mushrooms until soft. In seperate bowl beat eggs and add to skillet, cook on medium high until almost set. Meanwhile turn on oven to broil. Add diced Fontina cheese to egg mixture, sprinkle parmesan cheese on top and place in oven until puffy and gloden brown on top.Remove and let cool before slicing.Number of Servings: 8Recipe submitted by SparkPeople user STCBROWN01.
