Heat 12" heavy ovenproof skillet (cast iron is good) with spray oil. Stir in the onions, potatoes, half the shallots and 2 big pinches of salt. Cover and cook, stirring occasionally until the potatoes are just cooked through - about 5 minutes.2. Stir in the vegetables and cook until they begin to soften. Remove half of the veggies to a plate.3. Whisk 1/2t salt into the eggs then pour into the skillet. Cook about 5 minutes over med/low heat or until the eggs are just set, but not browning. Lift the edges of the cooked egg and allow more eggs to run around - like an omlette.4. Sprinkle the remaining veggies over the eggs, and sprinkle with cheese and shallots.5. Place under a low broiler for a couple of minutes, or until the eggs are puffed, set and browned. DO NOT WALK AWAY! It will burn in an instant.6.
