You can use any veggies you want. The yogurt makes the egg mixture creamy, and makes a great topping. The wheat germ adds a sweetness and crispy crust topping and you can up the protein by adding any lean protein you want. I was high on protein this day, so I limited it. Be creative.3) Mix the egg whites and whole egg with seasoning and 1T of the yogurt - makes it delicious and creamy (think custard batter texture).4) Pour over the veggie batter, and bake in convection oven or regular oven for 20-25 minutes at 350-375 degrees. It will set beautifully when done.5) Remove from oven, and sprinkle wheat germ over the frittata. Also add the salsa and the remaining yogurt as topping. You can also sprinkle with fresh herbs.Again, you can make a million variations of this, but it was so good I had to share it!
