Preheat broiler.Prepare chopped vegetables. If they are frozen, let them defrost and drain off any liquid. Or use fresh chopped veggies. If using potatoes (these weren't figured into the calories), make sure they're cooked first.In a non-stick pan, add a big of PAM or butter. Stir-fry the veggies for 4-5 minutes over medium heat until tender. Add eggs directly into the pan and stir to break up the yolks and mix slightly. Let it cook for a minute and then give it one gentle stir. Now let it cook over low heat until it is quite set and dry around the edges, but still a bit wet on top. Don't stir it again while it's cooking.Put pan on a top rack in your oven, under the broiler, for 1-3 minutes (watch carefully). Divide into two serving.
