How Do I Make Buckwheat gluten free waffles?

Here is how you make Buckwheat gluten free waffles:

Pre heat waffle griddle. (I can make four at a time in mine) Add all flours to mixing bowl. Grind any in blender that need it and add them. Add Salt, sugar, oil, milk & lemon juice to mixing bowl. In very clean glass or metal bowl beat all three egg whites with mixer until stiff peaks form. You can add one or more yolks to batter mixing bowl if you wish. (not with whites!) Fold egg whites into the batter. Spray griddle with canoil oil air pump. (might want to try one waffle at first just to get a feel for how your griddle cooks it etc. Pour batter onto hot griddle in the shape of an X (a little less than a 1/4 cup) for each waffle. Cook for about 3-4 min. Steaming will slow as they are cooked. Makes about 10 waffles Make them all and freeze a few for mornings you are in a rush! Note: The Chickpea flour and buckwheat flour are the most important. If you need to sub in others I'm sure this recipe could still work. I often use what I have on hand other than the first two.
