Mix uncooked oats and nuts together and spread on a non-stick or parchment lined baking sheet with sides; bake for 10 minutes, stirring once halfway through. NOTE: Do no add the wheat germ here as it will burn!! You will be adding it at the end of the baking time.Meanwhile, whisk together honey, oil, apple juice, spices and vanilla together in a cup. When oats and nuts are done, put them into a large bowl; set the pan aside. Pour honey-spice mixture over oats mixture and mix thoroughly to distribute and coat completely; spread mixture back over pan.Return pan to oven and bake for 15 to 20 minutes more, stirring every five minutes. Add the wheat germ for the last 2-3 minutes of baking time at most. Be very careful with this part because wheat germ burns VERY easily.Fold currants into mixture; let cool.
