In a small saute pan, heat olive oil over medium heat. Add spinach and garlic. Saute for 2-3 minutes or until garlic is heated through (but not browned). Remove spinach from skillet and set aside.In a large skillet, heat margarine over medium heat. Add egg beat mixture and allow to set halfway. Split the slice of provolone in half and place on one half of the egg mixture. Add tomatoes, spinach and feta. When egg is 3/4 of the way set, fold in half. Cook 1-2 minutes. Flip the omelette over on it's other side to complete the cooking 1 more minute.
