Here is how you make Happywriter's Healthy Huevos:

1. Mist a microwave or oven proof dish with cooking spray.2. Add seasonings to the dish - anything you'd like - mushrooms, olives, shredded potato, garlic, oregano, black pepper - anything you want! (please be advised that nutritional info is for green pepper and onion only)3. Add 1 egg and 1 egg white (beat lightly if you wish) on top of the seasonings4. Add 3 slices of tomato on top of the egg and seasoning5. Bake for 15 minutes6. After 15 minutes add cheese on top7. Bake for 5 minutes*8.
