Mix egg, lemon juice & rind, shortening & apple sauce til smooth.In separate bowl, mix all dry ingredients.Slowly work the dry and wet ingredients together until smooth and no longer crumbly. Roll into log.Bake 325 for 20-30 minutes (I have a convection oven and bake for 20 minutes)Let cool and cut into slices and toast @ 275 degrees for 15-20 minutes.
