Here is how you make Mediterranean Fritata:

combine eggs,salt and milk and beat until well mixed. in a large skillet warm 1 tbsp olivve oil over low to medium heat. add onion peppers and garlic. cook until onion is tener but not brown. add feta cheese,olive, basil and black pepper. pour eggg mixture in skillet and cook oner medium heat. as egg mixture sets on the bottom of pan lift edge of the mixture with a spatula so the egg runs under to cook. continue until egg mixture is set. sprinkle top with parmesan and remaining olive oil. place skillet under broiler four inches from the flame. heat fritata for 1-2 minutes until firm. cut into 4 wedges and serveserves 4Number of Servings: 4Recipe submitted by SparkPeople user WENDIBARRY.
