1 fresh green chile, minced (or use canned, about 2 tbsp)
1 tsp ground cumin
1 tsp ground coriander
1 tsp dried cilantro
16 oz. soft tofu, pressed (placed between two plates with a weight on top, like a can of vegetables, for about 15 mins)
1.5 cups salsa

Here is how you make Mexican Tofu Scramble:

In a wok or heavy skillet, warm the oil over medium heat. Add the onions and saut? about 5 mins, until they begin to soften. Add the garlic, bell pepper, chile, cumin, coriander and salt, and saut? another 2-3 mins.Crumble the pressed tofu into the vegetables and gently fold into mixture to incorporate. Cook uncovered for about 4-5 mins without stirring, until moisture evaporates. Add the steamed kale. Gently turn over scramble and cook for about 2 more minutes. Remove from heat. Serve on plates with salsa and hot sauce on top.
