In the great big iron skillet your mom gave you when you first got married as a training tool for the new husband, pour a teaspoon of olive oil. Heat it at medium. Chop the onions and garlic first, very small, and put them in the oil. Chop one carrot and grate one carrot into the pan. Once the onions have become translucent, add the chopped pepper and chopped cilantro. While still warm, shake grated parmesan cheese over the top. Then eat 'em, or pack 'em for very quick breakfasts for the rest of the week. (Microwave for about 30 seconds.
