In a medium mixing bowl, combine wet ingredients (milk, melted butter, honey and eggs). Pour wet ingredients into dry and mix just until combined. Lumps are okay. Grease your griddle or pan with a little cooking spray, and preheat until a little water sprinkled on it pops and bubbles immediately. When it is hot, pour 1/4 c of batter for each 4 inch flapjack. leave room for flapjacks to rise and expand. About 3/4 inch between them should be enough. When bubbles rise to the surface of the flapjack and the bottom is a golden brown (2-3 minutes) then flip and cook for another minute or two until the other side is golden brown. Serve immediately.
