preheat oven to 375.combine first five ingredients in one bowl and mix well. combine the wet ingredients (soy milk, applesauce, butter (melted), and egg) in another bowl.spray 8x8 pan with cooking spray. mix wet ingredients into dry ingredients and put in the pan. cook for 20 minutes.(NOTE: i cooked for about 35 minutes... next time would turn down to 350 degrees and cook for longer, because middle was slightly wet and edges were slightly crisp, although it hardened after cooling.
