I sometimes make an omelet for dinner, add some whole wheat toast and tomatoe juice and you have a wonderful meal. The veggies here are suggestions, I throw in practically anything I have on hand. beans, leftover veggies, etc - good way to use up leftovers. I even tried it once with spaghetti - quite tasty! You can make your own adjustments for your needs - sub another meat for lower sodium, another cheese and use egg white only for low fat, etc.

3 T. cold water
4 oz. can mushrooms
1/2 C. diced onion
1/2 C. dicedCelery
1/2 C. diced Carrots
1/2 C. diced Green Peppers
1/2 C. chopped fresh Spinach
1/2 C. chopped Broccoli, fresh or frozen
2 oz. Ham, extra lean, shredded or diced
2 oz. Swiss Cheese, slices or shredded
Salt and Pepper to taste


How Do I Make Quick and Tasty Omelet?

Here is how you make Quick and Tasty Omelet:

Place can of mushrooms in a small saucepan or microwave safe dish, including liquid. Add all other vegetables. Heat until vegetables are as done as you like them. If any liquid remains, drain and save for use in another recipe wher vegetable broth can be used.While vegetables are cooking, Place the eggs and water in a small bowl. Beat with a wire whisk.When vegetables are nearly done, spray a 10" non-stick frying pan with canola oil or olive oil cooking spray. Heat skillet. Add eggs to skillet. Keep temperature on medium high heat. Rotate the skillet to run undone egg mixture to the edge. When nearly set, score the omelet down the center with your spatula to create a crease for folding. Place the vegetables, ham and cheese on top of the eggs covering 1/2 of the skillet. Do not stir after this point. Cover for about 1 - 2 minutes until egg is set. Turn off heat. Gently fold omelet in half at the crease that was made. Cut in half and serve. If desired, you can also make individual omelets, making them just the same only dividing everything in two.
