1 oz black olives, pitted
1 c liquid egg substitute
1 dash black pepper


How Do I Make Omelet Mediterranean Style?

Here is how you make Omelet Mediterranean Style:

Spray nonstick skillet w/cooking spray. heat over med heat until hot. Cook and stir onion until crisp-tender, about 2 min. Add artichoke hearts, cook and stir until thoroughly heated. Add spinach, tomato, and olives; toss briefly. Remove from heat, put veggies in small bowl, set aside. Use a paper towel to wipe out skillet, spray w/cooking spray and heat over med heat until hot. Mix egg substitute and pepper in a small bowl and pour mixture into hot skillet. Cook for 5-7 min, as eggs begins to set, gently lift edge of omelet w/spatula and tilt skillet so uncooked portion flows underneath. When egg mixture is set, spoon vegetable mixture over half of omelet. Loosen omelet w/spatula, fold in half and slide onto serving plate.
