One of my favorite omelets. The goat cheese adds a very decadent, rich, mouthfeel. The basil adds a very bright taste. I sometimes make this for a quick dinner. Generous serving size. Hormel bacon bits 1 oz soft goat cheese 1 tbsp (or to taste) fresh basil, sliced into ribbons salt, pepper to taste How Do I Make Sunday Morning Omelet?Here is how you make Sunday Morning Omelet: Scramble eggs into bowl. Set aside. Heat small nonstick pan over med. high heat and spray with cooking spray. Add thawed artichoke hearts and bacon bits. Cook while constantly stirring just to warm - about 1 -2 minutes. Remove from pan. Add scrambled egg to pan. When bottom starts to cook, gently lift up sides so uncooked egg runs to bottom to cook. Continue until set, salt and pepper to taste. Arrange artichoke hearts over 1/2 of omelet, then add bacon bits, dot with goat cheese and sprinkle with basil. Fold other half of egg over artichoke hearts mixture, turn down heat and let sit a few minutes just to slightly melt cheese. Cut in half and serve immediately. Serves 2 generous servings.
