1 six inch CORN tortilla
1/2 cup non-fat refried beans
1/2 ounce finely shredded cheese (I prefer colby but you can use what you like)
Salt and pepper to taste
Pam (or other brand) non-stick cooking spray

Here is how you make Southern Style Omelette:

Put beans in a pan and on the stove to heat.While beans are heating, combine egg and egg white and beat until scrambled. Add salt and pepper to taste.Spray a pan with cooking spray and place over medium - medium low heat. Add eggs and allow to cook into an omelette (about 6 inches round). Keep the top side of the omelette slightly underdone so that the tortilla will stick and hold in place. If desired, you can heat the tortilla slightly in the microwave before placing it on the omelette.On top of the tortilla, place the 1/2 cup of now warmed refried beans. Add the tomato slices to the top of the beans (slightly to the side of center) and fold over.Once plated, add the stewed tomatoes and cheese.
