Here is how you make Protein packed omlet:

Scramble your eggs add cottage cheese, diced mushrooms, tomato, green onions and spinach ( the spinach can be torn into smaller pieces if needed) add pepper to taste ( I also use Mrs. Dash sometimes for different flavor) cook on medium heat in a skillet 2-4 minutes. The cottage cheese will melt down like regular cheese and the spinach will brighten some. Fold over like an omlet and sprinkle with feta cheese.
