This is a half and half pancake recipe using both whole wheat and white flour. I have found that using all whole wheat makes the pancakes too grainy. My sons love chocolate chips in theirs and I love blueberries in mine. But you can add whatever you like to the batter and throw it on the griddle. I use a non-stick griddle so there is no need for butter or oil on the pan to prevent sticking. The pancakes come out fluffy, light and yummy.

* All Purpose Flour, Pillsbury, 1/2 cup
* Granulated Sugar, 3 tsp
* Canola Oil, Food Lion, 2 tbsp
* Baking Powder, 3 tsp
* Salt, 1/4 tsp
* Egg, fresh, 1 large
* Milk, 2%, 3/4 cup
additionals:
mini semi-sweet chocolate chips
blueberries
peanut butter chips
milk chocolate chips

you can add any of these to the batter or right on top after you throw them on the griddle.

Here is how you make Pam's Pancake Surprise:

Preheat skillet to 375 degrees. Mix all dry ingrediants in a small bowl and set aside. Beat eggs til fluffy in a med size bowl with fork, add milk and oil to egg, once blended add flour mixture and mix with fork until blended (do not over beat). Use 1/4 cup scoop to put batter on heated griddle. cook for 3-5 (depending on your griddle) and turn. Cook for 1-2 min more. If you are adding chocolate chips or blueberries you can mix them in the batter before placing on griddle, or if your family is like mine and each wants one blueberry and one chocolate chip, you can add right after placing on griddle.
