This is NOT my recipe. They weren't bad, but they weren't great. I changed up the recipe and added my two cents below on how to cook them to try to make them stay together better.

* 2 egg whites
* 1/4 cup coconut flour
* 1/2 cup milk
* 1 teaspoon vanilla extract
* 1/2 teaspoon baking powder (I used baking soda, because I'm an idiot and realized I didn't have baking powder after the fact. It worked, though.)
* 1/8 teaspoon Himalayan salt
* 1/8 teaspoon cinnamon
* 2 tablespoons turbinado raw sugar (I just guessed, honestly.)


How Do I Make Gluten Free Coconut Flour Pancakes?

Here is how you make Gluten Free Coconut Flour Pancakes:

Combine all ingredients and stir until thoroughly combined. Heat a greased (I used a tablespoon to cook each olive oil for each pancake) nonstick skillet over medium heat for a minute or two. (You want the pan to be completely pre-heated so the first pancakes cooks correctly.) Pour desired amount of batter onto skillet (I split it into thirds to make small ones), and cook until golden/brown/ you're able to actually flip them), at least 5 minutes on each side it seems. Transfer to a plate and repeat with remaining batter, re-greasing (or spraying with cooking spray) between each pancake.
