My son wouldn't eat protein, only carbs, when he was younger, so I got in the habit of adding soy flour to his favorite carb breakfast foods. I also added ground flaxseed to up the fiber content and later switched out some of the white flour for the new white whole wheat you can get from King Arthur Flour (and now Trader Joe's). Now that my husband has been diagnosed with high cholesterol, the eggs have been switched out for egg product that has no cholesterol. And the pancakes are still delicious!

Here is how you make Hidden Protein Pancakes:

Mix all the dry ingredients with a wire whisk in a quart measuring cup or bowl with a pouring spout. Blend in the wet ingredients until batter is smooth. Let sit while griddle is heating on high. When a drop of water sizzle, lower flame to medium. Brush pan with canola oil if non-stick. Pour batter to form 3" circles on pan. Turn when bottoms are browned, after about 2-3 minutes, flip and cook other side. Continue cooking for 1-2 minutes until browned.
