Cr?pes are a weekend family favorite in our house. They can be eaten with savory or sweet fillings. Some savory filling ideas are saut?ed mushrooms or cooked spinach with a bit of nutmeg, milk and quick shake of garlic powder. Sweet fillings? Try a couple of squirts of buttery spray and a sprinkle of splenda for SUPER simple. Other classic sweet fillings include fresh strawberries or 100% fruit jam. These will make you feel like you're doing something bad but if you keep your fillings light...you're having a lovely treat. FYI - I have had success with using 1/2 whole wheat flour and 1/2 white flour. If you do this increase your batter resting time to 1.5 hours.

Here is how you make Cr?pes - French thin pancakes:

Mix all ingredients together with an immersion blender or in a food processor. Place in the refrigerator to rest for 45 minutes. This allows the flour time to absorb the liquid ingredients. Once the batter has rested, warm a nonstick 10" frying pan over medium high heat. The pan is ready when water droplets dance in the pan. Spray pan with cooking spray. At this point whisk batter to redistribute ingredients evenly. Using a small pitcher, pour some batter in the pan. Quickly turn the pan so that the batter coats the bottom of the pan. The 'pancake' should be very thin. Allow to cook for 1 minute or so and then flip. Keep in a warm oven while cooking the others. These can be filled with fresh fruit, jam or a bit of butter spray and splenda for a sweet treat. Or you can use spinach or saut?ed mushrooms to make it a savory dish. Makes 10 cr?pes.
