Weekends at our house, my wife makes delicious pancakes using a recipe we modified to make them very healthy. We use whole wheat flour, add all kinds of berries and sometimes bananas to the mixture. They really taste amazing with fruit cooked into them. To balance the macronutrient ratio, we add 50g of whey protein concentrate (WPC80) and an extra 1/2 egg white. We use dried skim milk powder to make the cup of milk for the mix, add grapeseed oil or macadamia nut oil, rather than canola oil and use honey or maple syrup to sweeten it. With the addition of whey, it makes the pancakes a bit flat, so we separate the yolk from the white, whip the egg whites and fold them into the mixture just prior to cooking them which fluffs them up quite a bit. This recipe makes the best panckes I've ever tasted.

Cut strawberries into small pieces, halve raspberries & blackberries, leave bluberries whole.Mix dry ingredients in bowl, make well in center then set aside.Mix wet ingredients, separate egg white from yolk into additional bowl.Add wet ingredients to dry, mix well, then add berries Add 1/2 egg white to bowl containing egg white, whip until stiff peaks form Fold whipped whites into mixture. Cook over medium-high heat, flipping once. (We use a stainless steel fry pan. When fully heated the pores in the stainless steel close and it becomes non-stick, more or less.) Ladle mixture into pan forming 4" pancakes. Cook until you see air pockets forming in cakes, then flip to finish cooking.Transfer from pan to warm plate in oven set to 150 degrees.Serving Size:?3 - 4 inch pancakes
