I figure you will make 8 pancakes (about 4-5" diameter...depending on how much water you use, 1/4 C or 1/2 C that orig recipe calls for) out of this volume, and 1 serving will be 2 pancakes, so 4 total servings from this recipe

Mix all ingred in blender. cook in pan or on griddle like you would pancakes. Butter them if you like, put little sugar-free syrup on them, add few blueberries with a dab of whipped cream (from can).

I like these much better than traditional pancakes from a breakfast restaurant or from a mix. Much more body and texture! Yum!

Also, I would recommend using only 1/4 c water, instead of the called-for 1/3 cup b/c the pancakes were just too runny, with smell, look, taste of an omelette. I had to add more flaxseed meal to compensate.
