The ingredients for Organic Spelt Pancakes are:

2 1/4 c Arrowhead Mills Organic Spelt Flour
2T Splenda for Baking
2 t baking powder
1/2 t salt
1 1/4 to 1 1/2 c 1% milk
2T Smart Balance, melted and cooled
2 large eggs, beaten
1 t Vanilla extract

Mix dry ingredients together. Make a well in the middle of dry ingredients. Add 1 cup milk and the Smart Balance. Using a wire whisk, stir in eggs, and vanilla. Gradually add up to remaining 1/2 cup milk to desired consistency. Whisk until batter is smooth (a few lumps may remain, but do not over beat). Add a little more milk if you like thinner pancakes. Let batter rest 5 minutes.

Cook on medium heat. Use Smart Balance on griddle surface or use non-stick griddle.

Makes approx. 12 3" pancakes.
