4 tbsps unpacked brown sugar, sifted to remove any lumps
1/2 to 1 tbsp ground cinnamon (or to taste)
1/2 cup all-purpose flour
Optional: pinch of salt
Optional: 1 tbsp butter

Here is how you make Ricotta Brown Sugar Cinnamon Pancakes:

In a large bowl, stir together egg yolks, ricotta, brown sugar, cinnamon, flour and salt if using. (A wooden spoon or sturdy spatula is helpful here). In another bowl, whip egg whites with a mixer until glossy peaks form, 3- 5 minutes. Add 1/4 of the egg whites to the ricotta mixture and stir to combine. Gently fold remainder of egg whites into the ricotta, being careful not to over-mix. Spray a non-stick griddle or skillet with cooking spray or melt butter in pan on medium heat. When griddle is hot, use 1/4 cup measure to form pancakes (I usually do 3 pancakes at a time). Flatten slightly and cook for 2-3 minutes per side. Keep pancakes warm until ready to serve.
