Yields 12 4-inch pancakes; I counted 2 pancakes as 1 serving1. Heat electric griddle to 350 deg F or nonstick frying pan over medium low heat. 2. Sift together whole wheat flour, baking powder, baking soda, salt and sugar into large bowl. Alternatively, place items in bowl and use a whisk to stir together until combined. This helps to aerate the flour and remove any lumps.3. Beat together eggs, buttermilk, and applesauce until well mixed.4. Pour wet ingredients into dry and mix until just combined. A few lumps are ok, they will cook out. Batter does not need to be smooth. If it is, the pancakes may turn out rubbery. 5. Let batter rest for 5 minutes. 6. Test griddle or pan by flicking water on it. If it 'dances' then the griddle is ready.7. Use a disher (a scoop that is used for scooping muffin batter) or 1/4 cup size measuring cup to ladle batter into pan. Let pancake cook until bubbles form and bottom is golden, about 3 minutes. Flip and cook about 2 minutes more until other side is golden. 8. Serve and enjoy. Pancakes can be refrigerated.
