- Olive Oil, 2 Tbsp.

- Juice and Zest of One Lemon
- Ground Nutmeg, 1 pinch

- Sugar, 1 Tbsp.
- Salt, 1/8 tsp.

- Coconut Oil (this is what I use)
- Butter

Here is how you make Lemon Pancakes, Whole Wheat:

Cut your lemon in half and juice it with a citrus juicer or squeeze the juice out by hand into a medium mixing bowl.Then zest the the lemon peel with a cheese grater.Add all ingredients to a medium mixing bowl and mix until smooth.If the mixture becomes to thin I let it sit for about 5 minutes to allow the bubbles to go down a little.Heat a pan on medium heat (I use a small pan so I only cook 1 at a time, taking me 20 minutes to cook, but if you use a larger pan and can cook 2 or more at the same time, it should only take 10 minutes or less).Add your oil or butter of choice and spread it around the pan by tilting the pan side ways in different directions so that the oil slides around.Spoon some of the batter into the pan until you have your desired pancake size (I make mine about 5 inches in diameter).Cook until many bubbles are popping up in the middle, then flip with a spatula and cook for another 30 seconds to 1 minute.Now your first pancake is done, use the spatula to move it to a plate.You'll probably need to add more butter or oil now and spread it again.Repeat with the remaining batter.Serving Size:?Makes 8 pancakes.
