Preheat oven to 350 Degrees.Spray cooking pan with no-stick spray and place pita on top.In a skillet, over medium heat, cook bacon to your liking. When completed, add shallots and tomatoes to the pan until the begin to sizzle. Set aside. Chop bacon into small pieces, mix with tomato and shallot mixture. In a separate bowl, whisk together egg, egg whites, and pepper.Pour tomato, shallot, and bacon into egg mixture, mixing evenly.Pour on top of pita, making sure not to go over.
