How Do I Make Asparagus and Mashed Potato Frittata?

Here is how you make Asparagus and Mashed Potato Frittata:

Heat pan over medium heat. Add oil and butter and the 1/2 onion, thinly sliced. Cook til the onion gets some color. Add the asparagus (cut into inch-long diagonal pieces), reduce the heat to medium low, and cover. Cook until asparagus is just tender, about 6 minutes. Meanwhile beat eggs together with the half&half and a pinch or two of salt. When the asparagus is done, scatter over 1 cup of mashed potatoes, cut into cubes (easiest if they are fresh from the fridge and firm). Pour eggs over all and sprinkle on black pepper, cayenne and paprika. Turn heat back up to medium and let cook a while. When eggs begin to set, preheat broiler and scatter the cheese over the eggs. Pop the pan under the broiler, as close as it can get, and cook until eggs are completely set (but not overcooked) and the cheese is melty and beginning to brown. If you don't have an overproof skillet, you can leave the door open with the handle sticking out--as long as the pan is close enough to the heat the eggs will finish cooking.Number of Servings: 6Recipe submitted by SparkPeople user MYREDRADIO.
