In a small frying pan, heat olive oil over medium heat. Add the potatoes and onion and toss to coat. Cover the pan for 5 minutes, stirring occassionally to soften the vegetables. Uncover, add the asparagus and salt and toss. Increase the heat to high and cook to brown the potatoes, about 5 minutes. Meanwhile in a separate bowl, lightly beat the eggs. Remove vegetable mixture to the bowl and stir to combine. Immediately return the mixture to the hot pan. Cook over medium heat until the eggs set and the bottom starts to brown.
