Here is how you make Fried Potato Mash:

Heat canola oil on med-low while you are dicing your potatoes.Cut potatoes to desired size and add to pan.Cook potatoes until they are done to your liking. In the meantime - dice your onions, chives and garlic.Add veggie mixture once potatoes are cooked to your liking.Cook with onions etc. stirring occasionally, until onions reach desired consistency.Crack egg in a bowl and break yolk.Add egg to pan, stirring all the time (the egg will cook fast)Once egg is cooked, dish is done.Salt and pepper to taste.Serving Size: Makes two 1-Cup servingsNumber of Servings: 2Recipe submitted by SparkPeople user LILMEGSTAR.
