Just like mom's cooking, only not as much oil and gluten free.This recipe freezes really well! I separate the cooled latkas with wax paper and freeze in a zip lock. They are great as a quick breakfast food. Just microwave for a minute or so and they're almost as good as fresh! Mom always served them with applesauce and sour cream. Plain yogurt is a great substitution for the sour cream.

Grind GF crackers and breadsticks in food processor until nearly powdered, set aside.Grate potatoes and onions. Mix in eggs, salt, pepper, and breadcrumbs. Fry in a non-stick skillet, barely coating the skillet with half olive half safflower oil between batches. I use a 1/3 cup ice cream scoop to measure each latka. That insures they're the same size. Cook on medium low heat until golden brown, roughly 4 minutes per side. I cook the full batch, blotting the oil by sandwiching the latkas between two sheets of paper towel.
