Here is how you make Potato Pancakes With Avocado Mash and Eggs:

Mix the drained and squeezed potatoes and onions together, add salt and pepper.Place 1T coconut oil in non stick cooking pan. heat over medium heat. Divide mixture into 6 heaps. Place 3 heaps in skillet and cover with aluminum foil. Cook 7 minutes. Turn over and cook another 8 minutes. Repeat with remaking potatoes.Cook eggs in same pan. While eggs are cooking mash avocados and divide into 6 equal parts placing 1 part on each pancake.
