3 tbsp Earth Balance or smart balance butter substitute

4 tsp baking powder

Here is how you make Sweet Potato, Cheddar and Chive Biscuits:

1. Prep a baking sheet by lightly flouring it and set a pot of water on to boil.2. Combine flour, baking powder, baking soda, salt and pepper in a bowl and set aside.3. Peel, cube and boil sweet potato in water for roughly 10 minutes. Drain, rinse and quickly mash the potato and the Earth Balance together in a mixing bowl.4. Once potato is well mashed, add flour mixture to the potato in stages and work it in to form a soft dough; as the dough is beginning to form add ⅓ cup cheddar and ⅔ of the green onions and continue to work until dough is achieved.5. Turn finished dough out onto a floured surface and roll it to about ?? to 1? thick. Use a water glass or cookie cutter and cut out biscuits and place them on the baking sheet you prepped earlier. 6. Sprinkle tops of biscuits with the rest of the cheese and then bake in oven for 16-20 minutes. The tops of the biscuits should be a light golden brown.
