Here is how you make Sweet Potato Mini-Quiches:

Preheat oven to 375 and generously spray a large muffin tin with cooking spray. Mash together all ingredients except parmesan (a whisk may be helpful). Evenly distribute the mixture among the muffin cups (each will be about 1/2 cup). Sprinkle the parmesan on top of the cups. Bake about 30 minutes, until quiche puffs up and a knife inserted in the middle comes out clean. Let cool for 10 minutes, then remove cups from muffin tin and let cool completely (or eat hot!).
